I had a little bit of mashed potatoes left from the night before and couldn't deside if I wanted corn fritters or potato pancakes, so I combined them. Boy were they good.

Ingredients For potato-corn fritters

1 cancream corn

1 cmashed potato (stiff either fresh made or leftover)

1 lgegg

1/2 cflour

1 tspbaking powder

salt and fresh ground pepper to taste
How To Make potato-corn fritters

1In a bowl combine all the ingredients and drop by table spoon fulls into a hot well oiled frying pan, cook until done flipping half way through. Serve with either butter salt and pepper like I like them or with maple syrup like Eric likes them.
