This recipe is a great pot luck dish, wonderful side dish at dinner and is a family favorite. It came from an old rodeo cookbook. The original submitter was Sharon Camarillo NFR Barrel Racer Champion. Recipe can be doubled or tripled.

Ingredients For potato casserole

  • 1
    1 lb bag of hash brown potatoes
  • 1
    diced onion
  • 1 can
    cream of chicken soup
  • 1/2
    pint sour cream
  • 1 c
    grated cheddar cheese
  • 1 c
    corn flakes
  • 1/2 stick
    melted butter

How To Make potato casserole

  • 1
    Combine Hash Browns, onion, Cream of Chicken Soup, Sour Cream and grated Cheese, pour into a baking dish.

    Stir together Corn Flakes and Melted Butter and pour over the top of the casserole.

    Bake at 350F degree oven for 1 hour and 15 minutes.
