A great receipe for leftover mashed potatoes.our grandkids LOVE these.i buy frozen sometimes but these are AMAZING.Leftover mashed potatoes do not reheat well,but this receipe wakes them up.

Ingredients For potato cakes

  • 2 c
    mashed potatoes
  • 1 lg
    egg
  • 1 sm
    onion or several green onions,chopped
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    garlic powder
  • 1 c
    all-purpose flour
  • 1 c
    oil for frying

How To Make potato cakes

  • 1
    Mix all ingredients except the oil into the potatoes.

    form into patties
  • 3
    Fry in HOT OIL until browned on each side
  • 4
    Drain on paper towels
  • 5
    Can also add crispy bacon,ham,or shredded cheese,I like sharp chedder or fresh Parmesan sometimes .
