My twist on a breakfast meat and potato skillet - with a little extra seasoning and using ground turkey (leaner, and often cheaper than pork sausage). This pairs well with egg, toast, or served as a stand-alone meal for a quick and easy dinner. It's perfect to make when you only have a few potatoes left and you're in a hurry to make dinner.

Ingredients For potato and sausage skillet

  • 1/2 lb
    ground turkey
  • 2 sm
    onions, minced
  • 1/4 tsp
    cumin
  • 2 clove
    garlic, minced
  • 1/8 tsp
    fennel seed
  • 2 lb
    red potatoes, small, unpeeled and sliced thin
  • 3/4 c
    chicken broth
  • 1 sm
    ancient red pepper, chopped
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 1/2 tsp
    smoked paprika
  • 1/4 tsp
    rosemary (optional)

How To Make potato and sausage skillet

    Heat a large, nonstick skillet over medium high heat and add ground turkey, fennel seed, garlic, onion, and cumin. Cook until meat is well browned.

    Stir in all remaining ingredients and heat to boiling. Reduce heat to medium low and simmer for 8-10 minutes - stirring occasionally, or until potatoes are tender. Let mixture stand uncovered 5 minutes to allow a light sauce to form.
