I got this recipe from my mother; she used to serve it every Sunday after Church. I loved it.

Ingredients For potato and cheese casserole

2 lbbaking potatoes peeled and diced into 2 inch pieces

1 clovegarlic,minced or pressed
-
1/2 cthinly sliced green onion
-
2 Tbspbutter or margarine
-
4 ozcream cheese, room temperature and cut into cubes
-
1/2 chalf and half
-
3/4 tspsalt
-
1/4 tsppepper
-
8 ozcold brie or camembert cheese w/rind removed diced into 1/2 inch pieces. thyme or parsley for garnish
How To Make potato and cheese casserole

1Cook potatoes in boiling,salted water for 15 min or until tenter. Drain well.

2Meanwhile,saute garlic and green onion in butter for 12 minutes or until softened.

3Mash potatoes. Beat in garlic butter mixture, cream cheese, half and half, salt and pepper.

4Fold in Brie or Camembert cheese.

5Place in 1 1/2 quart casserole.

6Bake at 450 for 15 minutes or until top begins to lightly brown. Garnish with thyme or parsley.
