Budget recipes never tasted so good & you really can't go wrong with potato recipes, especially if it includes cheese. Yum!

Ingredients For poor man's baked taters

  • 4 md
    potatoes
  • 1 tsp
    salt
  • 3 Tbsp
    butter, melted
  • 2 tsp
    chives or dill, dried
  • 1 1/2 tsp
    caraway seeds or cumin
  • 4 Tbsp
    cheddar cheese, shredded
  • 1 1/2 Tbsp
    parmesan cheese, grated

How To Make poor man's baked taters

  • 1
    Preheat oven to 425 degrees F.
  • 2
    Peel potatoes if the skin is tough, otherwise just scrub & rinse. Cut potatoes into thin slices but not all the way through.

    Use a handle of a spoon to prevent the knife from cutting all the way. Put potatoes in a baking dish. Fan them slightly.

    Sprinkle with salt & drizzle with butter. Sprinkle with herbs. Bake for about 50 minutes.

    Remove from oven. Sprinkle with cheeses. Bake potatoes for another 10 - 15 minutes until lightly browned, cheeses are melted & potatoes are soft inside. Check with a fork.
