Ingredients For picadillo

1 1/2 lbground beef

1/2 tspsalt

1 tspblack pepper

1 tsporegano
-
1 tspcumin

4 clovegarlic, minced

1medium onion, diced

1medium jalapeno pepper, diced

1 Tbspall purpose flour
-
1/2 cbeef stock
-
1 can(15 oz) diced tomatoes
-
2medium potatoes (peeled and diced)

1 1/4 cgreen or black olives, chopped

oil for sauteing
How To Make picadillo

1Place the ground beef in a mixing bowl. Add salt, pepper, oregano and cumin. Combine thoroughly. Set aside.

2Heat the oil in a frying pan and saute the onions, jalapeno pepper and garlic until soft.

3Crumble the ground beef mixture into the onion mixture and cook until the meat is slightly brown. Add the flour to the ,ixture and stir until flour is combined well.

4Add the beef stock, tomato sauce and potatoes. Stir well, cover and cook on medium-low heat for another 20 minutes.

5Uncover, add olives, if using. Cook, uncovered, another 15 minutes or until liquid has reduced but meat is still moist.

6Add more salt and pepper if needed.

7Serve hot with refried beans, rice, your favorite salsa and hot flour tortillas. Also great for making burritos or empenadas.
