Ingredients For pecan coconut sweet potatoes

  • 1/4 c
    each brown sugar, shredded coconut and pecans.
  • 1 tsp
    vanilla
  • 1/2 tsp
    cinnamon
  • 3 lb
    sweet potatoes peeled and cubed
  • salt
  • 2 Tbsp
    melted butter
  • 2 c
    mini marshmellows

How To Make pecan coconut sweet potatoes

  • 1
    Cook the potatoes in boiling water for 10 minutes. Drain and sprinkle with salt. Preheat oven 350 degrees. Add the potatoes to a casserole dish.

    Mix the brown sugar, coconut, pecans, vanilla and cinnamon together. Sprinkle on top of the potatoes. Drizzle the melted butter over the top. Bake for about 20 minutes until the potatoes are very soft.

    Add the marshmallows and let bake until marshmallows are melted.
