Ingredients For pea and potato pancakes w lemon sour cream

  • 2 1/2 lb
    russet potatoes peeled and grated
  • 1 sm
    onion grated
  • 1 c
    frozen peas thawed
  • 1/4 c
    fresh parsley chopped
  • 3 Tbsp
    flour
  • zest of 1 lemon
  • salt and pepper
  • 1 lg
    egg
  • 2 c
    sour cream
  • juice of 1 lemon
  • 1 bunch
    green onons

How To Make pea and potato pancakes w lemon sour cream

    Squeeze as much liquid out of the potatoes and mix with the next 7 ingredients.

    Mix the sour cream, lemon juice, green onions with some salt and pepper.

    Add some oil to a large skillet. Scoop out potato mixture and drop into hot oil. Flatten with spatula and brown well on each side. Remove from skillet and drain on paper towels. Work in batches. Serve with a dollup of sour cream mixture.
