Quick easy side dish. Great for meat and potato lovers. This is my husbands favorite way to have potatoes.

Ingredients For parsley potatoes.

4 lgrusset potatoes peeled and diced

2 Tbspdry parsley or 4 tablespoons fresh

1 Tbspsalt

4 cwater or enough to cover potatoes.

1/4 cmargarine
How To Make parsley potatoes.

1Add potatoes, parsley, salt and water to pot, bring to boil. Simmer till fork tender.

2Drain well add margarine stir till margarine is melted. Adjust salt to taste. Do not mash, leave as bite size pieces.

3Keep warm till ready to serve. Enjoy.
