This is a simple recipe, yet really good. My mom used to make parsley potatoes when I was a little kid. They were ok, but this recipe is even better than hers.

Ingredients For parsley new potatoes

3 lbsmall red new potatoes

1/2 stickbutter or margarine

1/4 tspsalt

pepper, to taste

3 Tbspdried or fresh parsley

1/2 tspdried or fresh thyme
How To Make parsley new potatoes

1Boil the potatoes, whole, in a large pot of water. Bring to boiling. Cook for 15 minutes or until fork-tender, then drain. (I don't peel the potatoes.)

2Cut the potatoes in half and place them in a large bowl.

3Drizzle the melted butter over them, and then add salt, pepper, parsley and thyme. Toss to coat potatoes evenly, and serve.
