    potatoes peeled
  • 1/4 c
    butter
  • 1 c
    grated parmigiano-reggiano
  • 1 Tbsp
    black truffle oil

    Cook the potatoes in salted boiling water until soft. Drain and put through a ricer. Mix in butter and Parmesan cheese. Stir in Truffle oil. Season with salt and Pepper
