    medium size red potatoes, cut into 1-inch pieces
  • 8
    sprigs fresh thyme
  • 1 c
    grated parmesan cheese
  • 1/4 c
    olive oil
  • kosher salt and black pepper

How To Make parmesan roasted potatoes

  • 1
    Heat oven to 400 degrees. In a large roasting pan, toss potatoes, thyme, parmesan cheese, oil, 1 t. salt and 1/4 t. pepper. Roast, stirring often until golden brown and crisp, 45-50 minutes. Makes 4 servings.
