Ingredients For parmesan mashed potatoes

  • 2 lb
    yukon gold potatoes peeled and cubed.
  • 2 c
    chicken stock
  • 4 oz
    cream cheese
  • 1/2 c
    sour cream
  • 1/2 c
    shredded parmesan cheese
  • salt, pepper and butter

How To Make parmesan mashed potatoes

  • 1
    Add the chicken stock to a pot and bring to a boil. Add the potatoes and cook until most of the stock is gone. If the potatoes aren't all the way done add more stock.

    Remove potatoes to a ricer and mash them. Add them back to the pot and stir in the cream cheese, sour cream and Parmesan cheese. Cook until the cheese has melted.

    Season with salt and pepper and serve with a little butter and more parmesan if desired.
