Ingredients For pralene yams

  • 2 can
    2lbs bruce's yams (drained)
  • 2/3 c
    orange juice
  • 2 tsp
    salt
  • pinch
    pepper
  • 1 tsp
    ground ginger
  • 1/2 stick
    butter, melted
  • 1/3 c
    brown sugar, lightly packed
  • 3
    egg yolks
  • 2/3 c
    brown sugar
  • 1 stick
    butter, melted
  • 1 c
    chopped pecans
  • 1 tsp
    ground cinnamon

How To Make pralene yams

    In large mixing bowl mash potatoes until smooth
  • 2
    Add orange juice, salt, pepper, ginger, 1/2 butter, 1/3 cup brown sugarand egg yolks
  • 3
    Blend till light and fluffy
  • 4
    Grease a 9x13 pan (can use glass or tin)

    Pour in mixture until smooth on top
  • 6
    Topping for yams: mix the remaing brown sugar, 1 stick butter, pecans and cinnamon spread evenly over yams

    Bake at 350 degrees for 45-50 minutes

    Let stand for 10 minutes before serving
