Ingredients For pralene yams

2 can2lbs bruce's yams (drained)

2/3 corange juice

2 tspsalt

pinchpepper

1 tspground ginger

1/2 stickbutter, melted

1/3 cbrown sugar, lightly packed

3egg yolks
-
2/3 cbrown sugar

1 stickbutter, melted
-
1 cchopped pecans

1 tspground cinnamon
How To Make pralene yams

1In large mixing bowl mash potatoes until smooth

2Add orange juice, salt, pepper, ginger, 1/2 butter, 1/3 cup brown sugarand egg yolks

3Blend till light and fluffy

4Grease a 9x13 pan (can use glass or tin)

5Pour in mixture until smooth on top

6Topping for yams: mix the remaing brown sugar, 1 stick butter, pecans and cinnamon spread evenly over yams

7Bake at 350 degrees for 45-50 minutes

8Let stand for 10 minutes before serving
