Elevate your side dish with these onion-stuffed baked potatoes. They have a creamy texture with plenty of butter and sour cream. We sauteed the onions and they add tons of flavor to the filling. Top off these twice-baked potatoes with extra cheese and bacon bits for a hearty side dish that will be a hit with your family.

Ingredients For onion stuffed baked potato

4 mdbaking potatoes

1/2 cchopped onions, raw or sauteed

1/4 cmilk
-
1/2 csour cream
-
2 Tbspbutter, not margarine

2 Tbspdried chives
-
2 Tbspbacon bits
-
1 Tbspparsley flakes

1/4 tspgarlic powder
-
salt and pepper, to taste
-
shredded cheddar cheese, as desired

Test Kitchen Tips
These were delicious on their own, but we did add extra cheese and bacon bits for serving.

1Preheat the oven to 400 degrees F. Wash the potatoes.

2Poke the potatoes in several places with a knife or fork.

3Bake the potatoes, unwrapped, for 2 hours. Flip them over halfway through.

4Let them cool to the touch.

5While the potatoes are cooling, saute the chopped onion in a pan for 3 - 5 minutes on medium-low heat. Cooking the onions is optional.

6When the potatoes are cool, cut the potatoes in half. Scoop out potato trying not to tear the skins.

7Put the potato in a bowl. Add the rest of the ingredients and mix with an electric mixer until well blended.

8Put potato mixture back into skins.

9Bake for about 25 minutes or until the top is lightly browned.
