This recipe incorporates some of my favorite flavors. Potatoes are eaten by just about everyone and with the roast garlic and olive oil it makes for a winning combination at my house.

Ingredients For new potatoes with roasted garlic

  • 1/4 c
    olive oil
  • 16 sm
    new potatoes
  • 2
    heads garlic, cloves separated but not peeled
  • sea salt and fresh ground pepper to taste
  • 2 Tbsp
    fresh parsley, chopped

How To Make new potatoes with roasted garlic

    Preheat your oven to 400° F.

    In a heavy skillet, heat the oil and brown the potatoes on all sides.

    Transfer the oil and potatoes to a casserole dish and add the garlic cloves. Stir to coat the cloves with oil. Bake for about 30 minutes or until the potatoes and garlic are tender.

    Remove from the oven and season with salt and pepper to taste. Sprinkle with parsley and serve.

    Note: Just squeeze the garlic out of their skins onto your potatoes.
