Ingredients For new potatoes with parsley-chive sauce

12 smnew potatoes

parsley-chive sauce (recipe follows)
- PARSLEY CHIVE SAUCE

2 Tbspbutter or margarine

2 Tbspflour
-
1/4 tspdry ground mustard

1-1/4 cmilk
-
1/3 cshredded sharp cheddar cheese

2 tspdried parsley
-
2 Tbspchoppes fresh chives or 2 teaspoons dried chives

1/4 tspsalt
How To Make new potatoes with parsley-chive sauce

1For the potatoes: Wash potatoes and peel a ½ inch strip around the center of each potato, leaving the rest of the skins on potato.

2Cook potatoes in boiling water for 15 to 20 minutes, or until tender. Drain.

3Serve with Parsley-Chive Sauce (below).

4For the sauce: Melt butter in a saucepan over low heat. Add flour and dry mustard. Cook for 1 minute, stirring constantly.

5Gradually add milk and stir continuously over medium heat until thickened.

6Add remaining ingredients. Stir until cheese melts. Makes about 1-1/2 cups.
