Ingredients For new potatoes and pesto

  • 1 c
    fresh basil leaves, packed
  • 1 c
    fresh parsley sprigs, packed
  • 1/3 c
    pine nuts
  • 2 clove
    garlic, minced
  • 1/2 c
    olive oil
  • 3/4 c
    freshly grated parmesan cheese (not the pre-packaged stuff)
  • 1/2 tsp
    freshly ground black pepper
  • 2 lb
    new potatoes, unpeeled

How To Make new potatoes and pesto

    Add the basil, parsley, pine nuts, and garlic to a food processor. Process until smooth. Pour olive oil into the food processor in a slow, steady stream with processor running. Process until blended. Stir in the Parmesan cheese and pepper. Set aside.

    Arrange potatoes in a vegetable steamer over boiling water. Cover and steam the potatoes for 20 minutes or until the potatoes are tender.

    Place the steamed potatoes in a large serving bowl; add the reserved basil mixture, and toss gently to coat well. Serve immediately.
