my version of shaker potatoes
This is so easy, pop it into the oven and enjoy!l It's a lovely recipe and has stood the test of time. It tastes as great today as it did years ago. A tasty side dish that will impress your guests or picky family members. Best of all this quick and easy to make recipe, uses leftover mashed potatoes and can easily be doubled or tripled. Don't forget to add butter, cream, salt and pepper to the potatoes if making fresh mashed potatoes. For those of you who want more, try these great additions; garlic, caramelized onions, fried mushrooms, fresh herbs, crumbled bacon, or different cheeses.

Ingredients For my version of shaker potatoes

2 cleftover mashed potatoes

1 caged or extra aged cheddar cheese, cubed

1 mdsweet onion, coarsely minced

1/4 cItalian bread crumbs

4 1/2 Tbspshredded Parmesan cheese

1/2 tspsalt
-
1/4 tspfresh ground black pepper
-
5 Tbspbutter, cubed
-
1/8 bunchfresh parsley, minced, for garnish
How To Make my version of shaker potatoes

1Preheat oven to 350 degrees F.

2Spread the mashed potatoes evenly into a buttered glass pan.

3Push the cheese cubes down into the potatoes, then cover with the onion.

4Sprinkle on the bread crumbs and then the shredded parmesan cheese. Season with the salt and pepper and top with the butter cubes.

5Bake for 45 - 55 minutes.
