Ingredients For mom's potato salad

  • 2 lb
    white potatoes
  • 1 c
    mayonnaise, preferably generic
  • 1 md
    white onion, diced
  • 4 md
    eggs, hard boiled
  • 2 pinch
    paprika
  • 2-3 pinch
    salt and pepper to taste

How To Make mom's potato salad

  • 1
    Cover potatoes with water in 4-quart saucepot; bring to a boil over medium-high heat. Reduce heat to low and simmer until potatoes are tender, about 10 minutes. Drain and cool and peel.

    Combine Mayonnaise, salt, and pepper in large bowl.

    Add potatoes, onion and eggs and toss gently.

    Add Salt and Pepper to taste

    Serve chilled.
