Ingredients For meringue yam casserole

  • YAMS
  • 4 lg
    yams scrubbed
  • 1 c
    brown sugar
  • 1/4 c
    butter
  • 1 tsp
    salt
  • 1 tsp
    ground thyme
  • 1 tsp
    each cinnamon and cloves
  • 1/2 tsp
    ground nutmeg
  • 4 lg
    egg yolks
  • MERINGUE
  • 4 lg
    egg whites
  • 1/2 c
    sugar

How To Make meringue yam casserole

    Preheat oven 375 degrees. Bake the yams until soft 1 hour. Let cool 30 minutes. Scoop the insides out and place in large bowl. Beat the yams with the remaining ingredients except the meringue topping. Place in a greased baking dish.

    Bake at 350 degrees for 30 minutes. Meanwhile beat the egg whites until stiff. Add the sugar and beat until glossy.

    Top the yams with the meringue topping. Place back in oven for 10 to 15 minutes until browned.
