I got this recipes from a cookbook called Country Ground Beef. This is so good, and a great way to use left over mashed potatoes.

2 cleftover mashed potatoes

1egg
-
1/2 smonion, finely chopped

1celery stalk, finely chopped

2/3lb. lean ground beef

1/2 cquick-cooking oats
-
1/3 cnonfat dry milk

1/2 tspsalt

1/4 tsppepper
- BOUILLON GRAVY:
-
1 Tbspbutter or margarine
-
2 Tbspall-purpose flour
-
1 cwater
-
1 tspbeef bouillon granules
-
1/2 tspbottled browning sauce,optional
How To Make meatballs in potato cups

1In a mixing bowl, combine potatoes and egg. Using an ice cream scoop, place eight mounds of potato mixture onto a greased baking sheet. Combine onion,celery,beef,oats,milk,salt and pepper; shape into eight meatballs. Press one meatball halfway into each potatoe "cup". Bake at 350* for 35-40 minutes or until the meat and potatoes are browned.

2Meanwhile, for gravy, melt butter in a small saucepan; remove from the heat. Blend in flour. Stir in water and bouillon. Add browing sauce if desired. Cook and stir until smooth and thickened. Spoon gravy over potato cups and pass any remaining gravy. Yield: 4 servings.
