One more recipe from that little tin box I found high on a shelf today. I only recall making these once, when I first got the recipe from a magazine - what, 20 years ago? Don't know why I haven't ever made them again. Maybe that's when I lost the recipe box!

These are delicious mayonnaise roasted potatoes, and a nice side dish. We opted to use mayonnaise to coat the potatoes. Once roasted, they are crisp and savory thanks to the seasonings. So good, you are going to want to skip the main dish and go right for the side.

Ingredients For mayonnaise-roasted potatoes

  • 1/2 c
    mayonnaise or Miracle Whip dressing
  • 1 Tbsp
    dried rosemary
  • 1 Tbsp
    garlic powder
  • 1 Tbsp
    onion powder
  • 1 tsp
    seasoned salt or Mrs. Dash
  • 1 Tbsp
    water
  • 2 lb
    small red potatoes, quartered

How To Make mayonnaise-roasted potatoes

  • Mayonnaise, seasonings, and water in a bowl.

    Mix mayonnaise, seasonings, and water in a large bowl or gallon-size plastic bag.
  • Coating potatoes in the mayonnaise mixture.

    Add potatoes; toss to coat.
  • Coated potatoes on a baking sheet.

    Place potatoes on a greased cookie sheet.
  • Roasting the potatoes.

    Bake at 400 degrees for 30-40 minutes or until golden brown; stirring after 15 minutes.
  • A small plate of Mayonnaise-Roasted Potatoes.

    NOTE: Oregano can be substituted for all or part of the rosemary. Feel free to decrease garlic and onion powders depending on your preference.
