Ingredients For mashed potatoes with blue cheese & parsley

  • 8 lg
    red skin potatoes peeled and cubed
  • 4 clove
    garlic
  • 1 c
    crumbled blue cheese
  • 2 Tbsp
    each butter & chopped parsley
  • salt and pepper
  • half & half to make the potatoes a smooth consistency

How To Make mashed potatoes with blue cheese & parsley

  • 1
    Bring a pot of water to a boil. Add salt. Add the potatoes and garlic cloves and cook until the potatoes are soft.

    Place the blue cheese, butter, and parsley in a bowl. Drain the potatoes and put them through a ricer.

    Stir the potatoes adding the cream until desired consistency. Season with salt and pepper.. Serve with a dollup of butter
