I found an old cookbook - not that old, published 2003. It's called "The Diabetic FOUR-Ingredient Cookbook." Written by a couple of nutritionists, it has some easy and interesting recipes in it. I thought some of these recipes might be what some of us weight watchers and carb watchers are looking for. Once I have tried them, I will post a photograph and comments.

Ingredients For mashed potatoes and carrots

4 mdpotatoes, peeled and cut into chunks

1 lgcarrot, peeled and cut into chunks

1/3 cskim milk

1 tspdried dill leaves
How To Make mashed potatoes and carrots

1In boiling water, add potatoes and carrot and cook for 25 minutes or until tender. Drain. Return to pot and mash. Stir in milk and dill.
