Ingredients For mashed potato bake w/chevre and fresh chives

2 cleftover mashed potatoes

3 ozgoat cheese (chevre for example)

2 Tbspfresh chives, chopped

2 Tbspflour
-
2eggs, beaten ( i used only 1 egg, small)

salt, to taste

black pepper or white pepper, to taste
How To Make mashed potato bake w/chevre and fresh chives

1Place the leftover mashed potatoes in a large mixing bowl. Add the other ingredients and stir together.

2Butter or oil a pie pan or similar. Spoon the mashed potato mixer into the pie pan, smoothing the top.

3Bake at 375 degrees for about 35-40 minutes or until the edges are lightly browned and crispy.
