Ingredients For mashed potato bake w/chevre and fresh chives

  • 2 c
    leftover mashed potatoes
  • 3 oz
    goat cheese (chevre for example)
  • 2 Tbsp
    fresh chives, chopped
  • 2 Tbsp
    flour
  • 2
    eggs, beaten ( i used only 1 egg, small)
  • salt, to taste
  • black pepper or white pepper, to taste

How To Make mashed potato bake w/chevre and fresh chives

    Place the leftover mashed potatoes in a large mixing bowl. Add the other ingredients and stir together.

    Butter or oil a pie pan or similar. Spoon the mashed potato mixer into the pie pan, smoothing the top.

    Bake at 375 degrees for about 35-40 minutes or until the edges are lightly browned and crispy.
