Ingredients For mashed potato cakes

2 cmashed potatoes

3large eggs, beaten

1 cgrated cheddar cheese

1/2 cgrated parmesan cheese

1/2 tspgarlic powder

1/2 tspdried basil

1/2 tspdried oregano
-
2 Tbspsour cream plus more for garnish

salt and freshly ground pepper to taste

sliced scallions
How To Make mashed potato cakes

1Preheat oven to 375 degrees. Spray cupcake pan well with nonstick spray.

2Combine potatoes,eggs, cheddar cheese, Parmesan, garlic powder, basil, oregano, 2 tablespoons sour cream and salt and pepper to taste. Divide evenly in the cupcake pan. Bake for 25 minutes turning the oven to broil for the last two minutes to turn them golden brown.

3Let cool for 10 minutes. Using knife carefully remove from pan. Garnish with sour cream and scallions.
