My mother-in-law loved baked potatoes and got to a point she couldn't eat them due to her health because they were to hard for her to swallow and she needed something real soft so we came up with this one together and i've made it ever since and I have a niece that we have a hard time getting her to eat anything besides scrambled eggs and she tried this and she loved it and asks for it all the time now

Ingredients For mary's cheesey smashed baked potato

1 - 2 cmayonnaise or Sour Cream

8Unpealed Russett Potatoes

1 pkgShreaded Cheese

1 bottleReal Bacon Bitts
How To Make mary's cheesey smashed baked potato

1Wash potatoes real good (DO NOT PEEL)

2Cut potatoes into large chunks

3Boil potatoes till you can cut it with a fork

4Drain potatoes and put back in the same pot add cheese and stir till cheese is melted

5Add Bacon Bits and either Mayonnaise or Sour Cream your choice (My family isn't big on Sour Cream so we do Mayonnaise) salt and pepper to taste and enjoy
