Gotta have taters with turkey. These are what I came up with for Easter Dinner. They were simply smashing. The lemon zest just brightens up the the whole potato plate. Cooking with Passion. sw :)

Ingredients For logan's greeky smashed potatoes

3 lbred skinned potatoes, cut in chunks

1/3 chalf and half-warm or soy milk
-
1/2 stickbutter-room temperature or 4 tbsp earth balalnce spread

1/4 cextra virgin oilve oil
-
2-3 Tbspgreen onions, sliced

2 lggarlic cloves, grated
-
1 Tbspall purpoose greek seasoning**less if desired**

1 tsporegano, dried
-
1 lglemon zest, grated

salt & pepper to taste
How To Make logan's greeky smashed potatoes

1Boil potatoes in large pot of salted water for 15 -20 minutes or until fork tender. Drain potatoes in a colander. Add potatoes back to pot. Smash the potatoes with whatever is handy. Add remaining ingredients. Continue to smash until all the ingredients are combined. Drizzle with extra oil. Serve warm.
