loaded mashed potatoes

My daughter doesn't like gravy that much, so I came up with this recipe so we could still eat our mashed potatoes, and you can add just about anything you like (broccoli, bacon bits, etc.). If you want to make it even quicker, use instant mashed potatoes.

Ingredients For loaded mashed potatoes

  • 8-10
    potatoes, peeled and quartered
  • water
    to cover potatoes, to boil them
  • 1/2 c
    milk
  • 1/2 stick
    butter or margarine
  • 2 Tbsp
    mayonnaise
  • 2 oz
    cream cheese, room temperature
  • 2 Tbsp
    sour cream
  • 1 c
    shredded cheese, i use sharp
  • salt and pepper to taste
  • garlic powder and chives to taste

How To Make loaded mashed potatoes

    Boil potatoes until tender, about 10-15 mins. Drain. Put potatoes back in pot, mash very well. Add all of the ingredients. Salt, pepper, garlic powder and chives to taste. Optional, if you have bacon bits on hand you can use them too. Serve warm.

    Refrigerate leftovers, if you have any. An idea for reusing the leftovers is to use them to top Shepard's Pie, very tasteful.
