This is easy to make because it starts with Instant Mashed Potato Flakes. I keep instant mashed potatoes because that is how I feed my sourdough starter, but they are so handy for other uses. Of course you can use real potatoes for this instead: just make about 6 servings of mashed potatoes.

1 3/4 cboiling water

3/4 tspsalt

3 Tbspbutter

1 cmilk or light cream

2 cdry instant potato flakes

1 csour cream

2 cshredded cheddar cheese, divided

8 slicebacon, cooked crisp and crumbled

3green onions, thinly sliced

How To Make loaded mashed potato casserole

1In a large bowl, combine boiling water, salt, butter, milk, and potato flakes. Stir with a fork until potatoes are well-mixed.

2Preheat oven to 350 degrees F. Prepare a 2-quart baking dish with cooking spray.

3Combine mashed potatoes with sour cream, mixing well. Fold in 11/2 cups of the shredded cheese. Spoon mixture into prepared baking dish.

4Bake potatoes for 25 minutes. Remove from oven and top with remaining cheese, green onions, and bacon. Return to oven for 5-10 minutes to melt cheese. Allow to rest 5 minutes before serving.
