This is easy to make because it starts with Instant Mashed Potato Flakes. I keep instant mashed potatoes because that is how I feed my sourdough starter, but they are so handy for other uses. Of course you can use real potatoes for this instead: just make about 6 servings of mashed potatoes.

Ingredients For loaded mashed potato casserole

  • 1 3/4 c
    boiling water
  • 3/4 tsp
    salt
  • 3 Tbsp
    butter
  • 1 c
    milk or light cream
  • 2 c
    dry instant potato flakes
  • 1 c
    sour cream
  • 2 c
    shredded cheddar cheese, divided
  • 8 slice
    bacon, cooked crisp and crumbled
  • 3
    green onions, thinly sliced
  • cooking spray

How To Make loaded mashed potato casserole

    In a large bowl, combine boiling water, salt, butter, milk, and potato flakes. Stir with a fork until potatoes are well-mixed.

    Preheat oven to 350 degrees F. Prepare a 2-quart baking dish with cooking spray.

    Combine mashed potatoes with sour cream, mixing well. Fold in 11/2 cups of the shredded cheese. Spoon mixture into prepared baking dish.

    Bake potatoes for 25 minutes. Remove from oven and top with remaining cheese, green onions, and bacon. Return to oven for 5-10 minutes to melt cheese. Allow to rest 5 minutes before serving.
