I needed a quick dish to go with oven fried chicken - so it had to be potato salad! I had some cheese already grated, and some bacon already made into bits, so adding a little sour cream and onion gave me a very nice side dish.

3 lgpotatoes, peeled and diced

1/2 colive oil mayonnaise (reduced fat)

1/3 clow fat sour cream

1 Tbspsugar

salt and pepper to taste

1/4 cfinely chopped red onion

3 Tbspbacon bits

1/4 cshredded cheddar cheese
How To Make susan's loaded baked potato salad

1Cook potatoes in boiling salted water about 20 minutes. Drain and rinse with cool water; chill.

2When chilled, combine mayonnaise, sour cream, sugar, salt, pepper, and onion in a bowl. Stir in potatoes. Gently fold in bacon bits and cheese. Chill until serving time.
