This is something I never had growing up....lemon and potatoes?? But they are wonderful with fish or chicken, grilled foods. Such a fresh nice taste!!

Ingredients For lemon potatoes

  • 2 pkg
    baking potatoes, peeled and cut into 1-inch cubes
  • 1 c
    onion, finely chopped
  • 3 Tbsp
    butter, melted
  • 1 Tbsp
    grated lemon rind
  • 3 Tbsp
    fresh lemon juice
  • 1/2 tsp
    salt
  • 1/4 tsp
    pepper

How To Make lemon potatoes

    Cook the potatoes in boiling water to cover for 3 minutes; drain well, and set aside.

    Saute the chopped onion in melted butter in a large skillet over medium heat until tender. Add the lemon rind, lemon juice, salt, and pepper, and stir well. Add the potatoes, and stir gently to combine.

    Spoon the potato mixture into a lightly greased 11 x 7 x 1 1/2 inch baking dish. Bake, uncovered, at 375° fir 50 minutes or until the potatoes are lightly browned.
