This is something I never had growing up....lemon and potatoes?? But they are wonderful with fish or chicken, grilled foods. Such a fresh nice taste!!

Ingredients For lemon potatoes

2 pkgbaking potatoes, peeled and cut into 1-inch cubes

1 conion, finely chopped

3 Tbspbutter, melted

1 Tbspgrated lemon rind

3 Tbspfresh lemon juice

1/2 tspsalt

1/4 tsppepper
How To Make lemon potatoes

1Cook the potatoes in boiling water to cover for 3 minutes; drain well, and set aside.

2Saute the chopped onion in melted butter in a large skillet over medium heat until tender. Add the lemon rind, lemon juice, salt, and pepper, and stir well. Add the potatoes, and stir gently to combine.

3Spoon the potato mixture into a lightly greased 11 x 7 x 1 1/2 inch baking dish. Bake, uncovered, at 375° fir 50 minutes or until the potatoes are lightly browned.
