Pretty much everyone has leftover mashed potatoes after Thanksgiving. Here is a great idea for your leftovers.

Reinvent mashed potato leftovers with these cheesy puffs. They taste like savory, cheesy mashed potato cookies. Unusual and delicious. Leftover mashed potatoes are combined with egg, shredded cheese, flour, and chopped scallions. Then, they're topped with more cheese to ensure each bite is nice and cheesy. When baking they puff up slightly. We dunked ours in ranch dressing but they were delicious on their own too.

Ingredients For leftover mashed potato cheese puffs

2 cmashed potatoes

1 lgegg
-
1 Tbspall-purpose flour
-
1 Tbspchopped scallion or chives

1 1/2 cshredded cheddar cheese, divided

salt, to taste

pepper, to taste
How To Make leftover mashed potato cheese puffs

1Preheat the oven to 350 degrees F. Combine the mashed potatoes, egg, flour, scallions or chives, 1 cup of cheddar cheese, salt, and pepper.

2Line a cookie sheet with parchment paper. Add 1 heaping Tbsp of the mixture to make little bundles. Bake at 350 degrees for 30 minutes.

3Sprinkle the remaining 1/2 c cheddar cheese over the bundles.

4Bake another 10 minutes until melted and golden brown. Let cool before serving.
