Pretty much everyone has leftover mashed potatoes after Thanksgiving. Here is a great idea for your leftovers.

Reinvent mashed potato leftovers with these cheesy puffs. They taste like savory, cheesy mashed potato cookies. Unusual and delicious. Leftover mashed potatoes are combined with egg, shredded cheese, flour, and chopped scallions. Then, they're topped with more cheese to ensure each bite is nice and cheesy. When baking they puff up slightly. We dunked ours in ranch dressing but they were delicious on their own too.

Ingredients For leftover mashed potato cheese puffs

  • 2 c
    mashed potatoes
  • 1 lg
    egg
  • 1 Tbsp
    all-purpose flour
  • 1 Tbsp
    chopped scallion or chives
  • 1 1/2 c
    shredded cheddar cheese, divided
  • salt, to taste
  • pepper, to taste

How To Make leftover mashed potato cheese puffs

  • Combine the mashed potatoes, egg, flour, scallions or chives, cheddar cheese, salt, and pepper.

    Preheat the oven to 350 degrees F. Combine the mashed potatoes, egg, flour, scallions or chives, 1 cup of cheddar cheese, salt, and pepper.
  • Add dollops of mashed potatoes to a lined baking sheet.

    Line a cookie sheet with parchment paper. Add 1 heaping Tbsp of the mixture to make little bundles. Bake at 350 degrees for 30 minutes.
  • Sprinkle with the remaining cheese.

    Sprinkle the remaining 1/2 c cheddar cheese over the bundles.
  • Bake mashed potatoes.

    Bake another 10 minutes until melted and golden brown. Let cool before serving.
