Ingredients For laura's sweet potato casserole

3 cmashed sweet potatoes (about 8 med. potatoes)

1 tspvanilla extract
-
1 cwhite sugar
-
2eggs
-
1/3 cbutter, melted
- TOPPING:

1 cbrown sugar
-
1 ccoconut, shredded
-
1 cpecans, in pieces
-
1/3 call purpose flour
-
1/3 cbutter, cold
How To Make laura's sweet potato casserole

1Bring a large pot of water to a boil; add sweet potatoes. Cook about 40 minutes or until done; drain and peel.

2Mash with electric mixer until fairly smooth. Mix first five ingredients together and place into a 9x13-in. baking pan.

3Mix topping ingredients together and cut in the butter.

4Sprinkle on top of potatoes and bake at 350 degrees for 30 minutes.

5Serve with turkey, ham, chicken, pork, whatever you like. Makes a wonderful holiday dish!

6My sister-in-law, Laura Lee Gwaltney, who shared this recipe with me. Every year at Christmas she makes this for our large family and there is never a spoonful left over.
