I made a breakfast casserole for Christmas Eve and I had sausage and bacon left over so I decided to create a different twist to twice baked potatoes. Turned out delicious with lots of flavor and cheesy too!!

Ingredients For kimi's bacon-sausage twice baked potatoes

  • 6 sm
    baking potatoes or 4 lg
  • 1/4 c
    butter
  • 1/4 c
    sour cream
  • 1 c
    shredded cheddar cheese
  • 1/3 c
    parmesan cheese
  • 1 1/2 c
    cooked bulk sausage
  • 5 slice
    cooked bacon-crisp
  • 1/2 c
    milk
  • pepper, garlic powder & dried onions (per your taste)

How To Make kimi's bacon-sausage twice baked potatoes

    In a 350F oven bake potatoes till done; about 1 hr. Remove and let cool to touch. Peel & cut into large chunks while still hot and place in mixer.

    Meanwhile cook bacon & sausage. Add in cooked bacon & sausage to potato mixture and then all other ingredients. Mix till smooth; leaving some cheese for the top of casserole.

    Bake at 350F for 30 minutes.
