Everyone raves about these potatoes when I make them. They're a great side dish and always a big hit at cookouts and potlucks.

Ingredients For kicked-up potato wedges

  • 4-6 md
    russet potatoes
  • 1/3 c
    olive oil
  • salt, to taste
  • seasoning salt, to taste
  • black pepper, to taste
  • 1 c
    sour cream
  • 1/2 c
    ranch dressing
  • 1/4 c
    milk
  • 1 1/4 c
    shredded cheddar cheese
  • 1/2 c
    shredded mozzarella cheese
  • 1/2 c
    bacon bits
  • 1/3 c
    diced green onions

How To Make kicked-up potato wedges

    Preheat the oven to 400 degrees F. Wash and dry potatoes. Do not peel.

    Cut potatoes into thick wedges.
  • 3
    Place potatoes on a lined baking sheet and drizzle with olive oil coating on all sides.

    Sprinkle liberally with the salts and pepper according to your taste.

    Bake at 400 degrees for 40 minutes or until fork tender. At this point, you can cook the bacon if you prefer not to use the half cup of store-bought real bacon bits. I use the packaged Hormel Real Crumbled Bacon Bits.

    In a bowl mix sour cream, ranch dressing, and milk. Once the potatoes are cooked, spread 3/4 of the sour cream sauce on an oven-proof serving dish.

    Place hot, cooked potato wedges on top of the sour cream sauce. Drizzle the remaining sour cream sauce on top.

    Sprinkle on the cheddar cheese, mozzarella cheese, and bacon bits.

    Top with green onion.

    Place back in the oven for five minutes or until the cheeses melt.
