On a hot day, who wants to heat up the kitchen? This is a basic recipe, but HOW they are fried, makes them a winner!! These are fried in a cast iron skillet on a gas grill. This picture was taken just before they were finished cooking.

Ingredients For outside skillet fries

4 - 5medium sized potatoes - with skins

salt and pepper, to taste

peanut oil
How To Make outside skillet fries

1Wash the outside of the potatoes.

2Slice the potatoes lengthwise into quarters, then slice crosswise to make 1/2 inch pieces - do not rinse again.

3Place in a bowl, toss with salt and pepper to taste, and let set.

4Place a 10" cast iron skillet on a grill and fill with about an inch of peanut oil.

5Allow oil to reach deep frying temperature, about 375 degrees F. (Keeping the grill lid closed should allow this temperature.)

6Place the potatoes in the hot oil and fry till golden brown on the outside and tender on the inside - again keeping the grill lid closed.

7Place the fried potatoes on a dish lined with paper towels.

8If you like, add more salt and pepper when finished.
