Ingredients For joan's sweet potato pudding

  • 2 lb
    sweet potatoes
  • 1/4 c
    butter
  • 1 c
    sugar
  • 3
    eggs
  • 3/4 c
    evaporated milk
  • 2 tsp
    vanilla
  • 2 tsp
    nutmeg (optional)
  • 2 tsp
    cinnamon (optional)

How To Make joan's sweet potato pudding

    Boil potatoes till tender. Peel. Add butter while potatoes are hot. Mash potatoes till smooth.

    Fold in sugar. Stir till well mixed. Add eggs, one at a time and beat into mixture well till all eggs have been added. Stir in milk, vanilla and spices.

    Pour into greased 2 quart casserole. Bake at 375 degrees for 30 minutes. Top with marshmallows and bake for 10 to 15 minutes more.
