We can still squeeze out a few barbeque days can't we? Can't you see this beside a good bone or two? Or with your baked ham and fresh string beans ? Go on now, I know you can see it!!!

Ingredients For it's hot potato salad

  • 10 lg
    red new potatos
  • 2 stalk
    celery, destrung and diced
  • 1 sm
    bell pepper, diced
  • 1 c
    yellow onions, diced
  • 4
    hard boiled eggs,chopped
  • 1 1/2 c
    hellmans mayonnaise
  • 3 Tbsp
    jalapeno peppers, diced
  • 3 Tbsp
    sweet pickle relish
  • 2 Tbsp
    apple cider vinegar
  • 1 1/2 Tbsp
    yellow mustard
  • 1 tsp
    celery seed
  • salt and pepper to taste, accent

How To Make it's hot potato salad

    In a large bowl, combine potatoes celery, bell pepper, and onions toss to blend, stir in chopped eggs.

    In small bowl combine mayonnaise with jalapenos, sweet relish, vinegar and mustard. Stir to blend. Pour mayonnaise mixture over potato mixture and fold in gently so you don't make mashed potato salad. Serve over cover and refrigerate until ready to serve.

    You can make this a day ahead as you know it will taste better the next day if folks don't eat it all up first. Enjoy
