Ingredients For irish potato cakes

4 cleftover mashed potatoes

2/3 cplus 2 teaspoons all-purpose flour

4 Tbspwhole milk

2 tspeach fresh parsley and chives, chopped

1 tspsalt

1 tspcoarsely ground black pepper

3 Tbspunsalted butter
How To Make irish potato cakes

1In a large bowl, combine the mashed potatoes, 2/3 cup of the flour, whole milk, herbs and salt and pepper to taste. Mix well. Knead the mixture for about 15 seconds

2Sprinkle the remaining flour on the work surface and turn the potato mixture onto the work surface.

3Divide the potato mixture into 8 balls and press gently into a 3" round.

4Heat the butter in a nonstick saute pan and saute each potato cake until a lovely golden brown. You may need to add more butter.

5Serve very hot.
