Ingredients For irish potato cakes

  • 4 c
    leftover mashed potatoes
  • 2/3 c
    plus 2 teaspoons all-purpose flour
  • 4 Tbsp
    whole milk
  • 2 tsp
    each fresh parsley and chives, chopped
  • 1 tsp
    salt
  • 1 tsp
    coarsely ground black pepper
  • 3 Tbsp
    unsalted butter

How To Make irish potato cakes

    In a large bowl, combine the mashed potatoes, 2/3 cup of the flour, whole milk, herbs and salt and pepper to taste. Mix well. Knead the mixture for about 15 seconds
  • 2
    Sprinkle the remaining flour on the work surface and turn the potato mixture onto the work surface.

    Divide the potato mixture into 8 balls and press gently into a 3" round.

    Heat the butter in a nonstick saute pan and saute each potato cake until a lovely golden brown. You may need to add more butter.

    Serve very hot.
