Ingredients For idaho potato supreme

1.5 cbroccoli, fresh flowerets

pinchnutmeg, ground

1 tspdijon mustard

2 tspcornstarch

1/4 cmilk, skim

1/2 cyogurt, plain and non-fat

4 lgpotatoes, baked

1 cturkey, cooked and diced

1/4 cred bell pepper, chopped

1/4 cgreen onion, sliced
-
1/2 cmushrooms, sliced

2 Tbspparmesan cheese, grated
How To Make idaho potato supreme

1In a l-quart microwave-safe casserole combine broccoli, mushrooms, green onion, red pepper and 2 tablespoons water.

2Micro-cook covered, on 100% power (high) 3 to 5 minutes or until vegetables are tender; drain well.

3Add turkey (or ham will work too); cook, covered, on high 2 to 3 minutes or until heated through.

4Stir together yogurt, milk, cornstarch, mustard and nutmeg; add to broccoli mixture.

5Cook, covered, on high 2 to 4 minutes or until mixture is thickened, stirring every 30 seconds.

6Spoon over hot baked potatoes; sprinkle with Parmesan cheese.
