How To Make healthier mashed potatoes

1Scrub or peel potatoes. Cook in 4 cups of broth 25 - 30 minutes until tender. Drain, reserving broth.

2Mash with 1 cup of reserved broth, olive oil, salt and pepper. (Freeze remaining broth for another use)
