My mother made this occasionally for company and it was great served with eggs or any other entree.

Ingredients For hashbrown casserole

  • 1/2 c
    melted margarine or butter
  • 1/2 c
    chopped onion
  • 1 can
    cream of chicken soup, undiluted
  • 1 tsp
    salt
  • 1/2 tsp
    pepper
  • 2 c
    grated colby cheese
  • 1
    2 lb. bag frozen hash brown potatoes, thawed slightly and broken up with a fork

How To Make hashbrown casserole

  • 1
    Preheat oven to 350 degrees. Spray a 9x13 casserole dish with cooking spray. In a bowl, combine soup, melted margarine (or butter), salt, pepper, onions, and cheese.

    Gently mix in the potatoes and pour all into prepared dish. Bake for 30-35 minutes.
