This very pretty pie, with green and red colors, is a great dish for Christmas morning breakfast. it is similar to a Denver Omelet, with peppers, onions and chopped ham, only better! All baked in a hash brown potato crust. We served a poached egg over each piece of this pie. It is a keeper. Enjoy! Recipe on a card from the store. Photos are my own.

Ingredients For bonnie's hash brown potato pie

    cups frozen hash brown potatoes
  • 1/3
    cup melted butter
  • 1
    cup cooked chopped ham
  • 1
    cup shredded cheddar cheese
  • 1/4
    chopped red bell pepper
  • 1/4
    cup green onions chopped
  • 1
    jalapeno chili, finely chopped
  • 2
    large eggs
  • 1/2
    cup milk
  • 1/2
    teaspoon salt
  • 1/4
    teaspoon black pepper

How To Make bonnie's hash brown potato pie

    Preheat the oven to 425 degrees. Put the hash brown potatoes on the bottom and up the sides of an ungreased 9 inch pie plate. Drizzle the melted butter over the potatoes and pat into place to form crust. Place the dish in the microwave for 2 minutes on high. Remove the dish and bake at 425 degrees for 25 minutes.

    Reduce oven temperature to 350 degrees. Layer the chopped ham, shredded cheese, red bell pepper, onion and jalapeno over the baked crust.

    Whisk the eggs, milk, salt and pepper in a bowl until blended and pour over the prepared layers. Bake for 25 to 30 minutes or until a knife inserted in the center comes out clean. Cover loosely with tin foil and let sit for about 10 minutes until set.
