This is a basic Haitian version of potato salad made with beets, peas, carrots and red and green bell peppers which turns a lovely pink when made and is delicious as well.

Ingredients For haitian potato salad

    potatoes, peeled and cubed
  • 1
    carrot, peeled and minced
  • 2 1/4 tsp
    salt
  • 1 sm
    beet
  • 2
    eggs
  • 1/2 c
    sweet peas
  • 1/2 c
    onion, minced
  • 1/3 c
    green bell pepper, diced
  • 1/3 c
    red bell pepper diced
  • 4 Tbsp
    mayonnaise
  • 1/4 tsp
    black pepper

How To Make haitian potato salad

    Boil potatoes and carrot in water with 1 teaspoon salt for 10 minutes or until tender.

    Boil beet separately in water with 1 teaspoon salt until tender, then peel and mince.Boil eggs separately in water with 1/4 teaspoon salt until hard.

    In a bowl, place cubed potatoes, minced beet, sweet peas, carrots, onion, red and green bell peppers and mix with mayonnaise. Add black pepper.
