Ingredients For greek potatoes

6medium potatoes, cubed

3 chot water

2garlic cloves, crushed

1 1/2 tspdried oregano

1/2 tspblack pepper

2 tspsalt

1 Tbspolive oil

1/3 cvegetable oil

1/2 cfresh lemon juice

fresh parsley, chopped
How To Make greek potatoes

1Toss potatoes with lemon juice, oils, spices and garlic in a deep flat pan.

2Add water. Bake uncovered for 1 1/2 hours at 475. Stir every 20 minutes. Add more water if necessary.

3Allow the potatoes to evaporate the water during the last 20 minutes until only the oil is left. Garnish with parsley and serve.
