My husbands Mother used to make these every wash-day when he was growing up and he loved them. He called them "Tater Dumplins"... She taught me how to make them for him too and he still loved them, so I guess they were good enough for him, lol... Rest In Peace my love! ?

Ingredients For grannie's potato dumplings

  • 4 md
    potatoes, peeled & diced
  • 1/2 stick
    butter
  • 3 c
    milk
  • 2 tsp
    salt
  • 1 tsp
    dried parsley
  • 1 can
    diced tomatoes
  • DUMPLINGS:
  • 3 c
    flour
  • 2 lg
    eggs
  • 1/2 c
    milk
  • 1 tsp
    salt

    Boil potatoes in water until tender. Do not drain, but add milk, butter, salt, and dried parsley. Bring back to simmer...

    Mix 3 cups flour, 2 eggs, 1/2 cup milk and 1 tsp. salt and mix well until you get a dough. Roll out on a floured table.. Cut and drop in hot milk and potato mixutre and cook at a low simmer, until dumplings are tender. Stir occasionally to keep dumplings from sticking together.

    When the dumplings are tender(done), add the can of diced tomatoes and heat throughly. I've made this with and without the tomatoes, but prefer it with them. Serve in large bowls as this is a good and filling meatless meal.
