I seem to always have some leftover mashed potatoes and never quite know what to do with them. This is a nice recipe to make patties that go well with eggs in the morning.

Ingredients For fried potato patties

2 cleftover garlic mashed potatoes

1 cmozzarella cheese, shredded

1 lgegg, lightly beaten

1/2 tspsalt

1/2 tsponion powder
-
1/4 tsppepper
-
1 lgegg, slightly beaten (for coating)

1 csoft bread crumbs

1/2 ccanola oil
How To Make fried potato patties

1Combine first 6 ingredients; shape into 6 patties.

2Dip patties into egg, and lightly coat with breadcrumbs.

3Pour oil into a large, heavy skillet. Fry patties in hot oil over medium heat until lightly browned, turning once.

4Drain on paper towels.

5NOTE: You can substitute 2 cups cooked, mashed potatoes plus 1/2 teaspoon garlic powder for the garlic mashed potatoes.
